娘惹仁當雞 • Nyonya Ayam Rendang


材料:
* 雞肉:半只(切塊,約800斤)
* 椰漿:100毫升
* 乾椰絲(Kerisik):2大匙
* 馬六甲椰糖 30克
* 楓柑葉 3-4 片/pcs
* 黃姜葉 1片 (切絲)
* 亞三皮 1片

腌制雞肉:
雞肉加入1茶匙鹽和1湯匙黃姜粉混合均勻,腌制半小時入味


乾椰絲(Kerisik)做法:
1. 將新鮮白椰絲在平底鍋中以中小火乾炒,直到椰絲呈現金黃色,散發出香味。(炒約10-15分鐘)
2. 將冷卻的乾椰絲放入i-Processor智能養生機(幹磨盃),按 Auto攪拌,攪拌成細膩的Kerisik
3. 完成後,將Kerisik倒出,備用


香料糊材料和做法:
*  乾辣椒:8 條(提前用熱水泡軟)
*  紅辣椒:3條
*  紅蔥頭:8粒
*  蒜頭:3瓣
*  黃姜:一小塊
*  峇拉煎 3克
*  姜:一小塊
*  南姜(Galangal):一小塊
*  石古仔 :2粒
*  香茅:3根
*  油 100毫升
*  水 50 毫升

**將所有的材料放入i-Processor智能養生機內,設定速度5號攪拌至5分鐘 (攪拌與煮的功能)

小貼士: -
**乾椰絲(Kerisik)**會讓這道菜的味道更加濃郁
- 這道娘惹Rendang雞以濃郁的香料和椰漿搭配而成,口感豐富,帶有一絲微辣,既開胃又下飯。

Nyonya Ayam Rendang

Ingredients:

    Chicken: Half (cut into pieces, about 800g)
    Coconut milk: 100ml
    Toasted coconut (Kerisik): 2 tablespoons
    Malacca palm sugar: 30g
    Kaffir lime leaves: 3-4 pieces
    Turmeric leaves: 1 leaf (thinly sliced)
    Tamarind peel: 1 piece

Marinating the chicken: Mix the chicken with 1 teaspoon of salt and 1 tablespoon of turmeric powder, then marinate for half an hour to allow the flavors to soak in.

To make toasted coconut (Kerisik):

    Toast fresh white coconut in a pan over medium-low heat until it turns golden brown and releases a fragrant aroma. (This process takes around 10-15 minutes.)
    Let the toasted coconut cool down, then grind it using a food processor  until finely ground.
    Store the Kerisik in an airtight container once done.

Spice paste ingredients and preparation:

    Dried chilies: 8 pieces (soaked in hot water until soft)
    Red chilies: 3 pieces
    Shallots: 8 pieces
    Garlic: 3 cloves
    Turmeric: 1 small piece
    Shrimp paste (Belacan): 3g
    Ginger: 1 small piece
    Galangal: 1 small piece
    Candlenuts: 2 pieces
    Lemongrass: 3 stalks
    Oil: 100ml
    Water: 50ml

Place all ingredients in a Itazzo I- processor, set to speed 5, and blend for 5 minutes (with cooking function).

Tips:

    Toasted coconut (Kerisik) enhances the dish’s rich flavor.
    This Nyonya Rendang chicken combines aromatic spices and creamy coconut milk for a complex, slightly spicy dish, perfect to pair with rice.
