Fresh sugarcane is traditionally boiled, making enough rock and brown sugar to last the whole year! At my aunt’s place, half the hillside is planted with sugarcane. Each year, we cut some to make sugar. In the past, it was due to limited supplies; sugar was a top nutritional choice. Now, it’s because homemade sugar is richer and purer! We harvested 2000 catties of sugarcane, boiling down a large jar of brown and rock sugar—enough for the whole year. This traditional, concentrated "raw sugarcane juice" sugar is aromatic, pleasantly sweet, and packed with nutrients. The best part is that the sweetness from childhood still lingers as we grow up!
