圣诞节快到了,做了充满圣诞气氛的“木头蛋糕”,也是“梦龙脆皮千层卷”。可丽饼面糊加了可可粉增添巧克力香味。内馅用了超浓郁的黑巧克力甘纳许奶油,再淋上黑巧克力脆皮。三重巧克力接力,巧克力控必试~放冰箱隔夜吃口感最佳,可丽饼变得更软更入味。切开来,看到层次分明的可丽饼卷起,像极了木头纹路。搭配巧克力脆皮,香杏仁粒,浓郁巧克力奶油,口感口味超好吃。适合圣诞节。
=可丽面糊要冰箱休息足够,帮助可丽饼软。
=室温太高容易导致面糊水油分离,可丽饼煎了出油。预先将油和鸡蛋混合包裹,帮助面糊不容易出油
=一定要防粘锅,锅预热不够可丽饼还是容易粘锅/开裂
=火候太大,可丽饼容易焦。
=一定要开冷气,室温高奶油也容易溶化。

收藏方式:做好收密封容器放普通冰箱冷却3-5天。

=Crepe batter should rest in the fridge enough to help produce soft crepes.
= Too high room temperature will easily cause batter to have oil water separation, yield oily crepe after fried. First mix oil with eggs to wrap up oil, help batter not easily oil separation.
=Must use non-stick pan, if pan is not preheated enough, the crepes are still stick/crack easily.
=If heat is too high during frying, crepes will burn easily.
=Be sure to turn on the aircond. Whipped cream melt easily at high room temperature.

Storage Method: Keep in airtight container and chill in normal fridge for 3-5 days.

=20pcs Chocolate Crepes 巧克力可丽饼=(18cmx15cm Rectangle Non-Stick Tamagoyaki Pan 方形防粘玉子烧锅)
120g All Purpose Flour 普通中筋面粉
20g Cornstarch 玉米淀粉
12g Unsweetened Cocoa Powder 无糖可可粉
38g Caster Sugar 细砂糖
1.5g Salt 盐
3 Eggs 鸡蛋 (Grade A等级, 65-69g/pc including egg shell 一颗包括蛋壳)
53g Unsalted Butter (Melted) 无盐牛油 (融化)
375g Milk (Room Temperature) 牛奶(室温)

=Chocolate Ganache Cream 巧克力甘纳许奶油=
150g Dark Chocolate 黑巧克力
150g Dairy Whipped Cream 淡奶油
300g Dairy Whipped Cream (Cold) 淡奶油 (冷)
30g Caster Sugar 细砂糖
4g Vanilla Extract 香草精

=Chocolate Shell 巧克力脆皮=
150g Dark Chocolate 黑巧克力
26g Coconut Oil (Crunchier)/Vegetable Oil 椰子油(更脆)/植物油
30g Roasted Almond Nibs 烤香杏仁粒
