【年菜】青瓜排骨酸(Spare Rib with Pickled Cucumber and Salted Bean Paste)

材料:
1条金鯧魚(800-900克)

酱料:
3瓣蒜头(剁碎)
1小块姜(剁碎)
1大匙豆酱(剁碎)
1汤匙酱油
1汤匙花雕酒/绍兴酒


装饰:
芫荽少许
青葱丝少许
辣椒丝少许


Ingredient:
1pcs golden pomfret (800-900g)

Sauce:
3 cloves garlic (minced)
1 small piece of ginger (chopped)
1 tablespoon bean paste (chopped)
1 tablespoon soy sauce
1 tablespoon Huadiao/Shaoxing wine

Decorate:
Some coriander
Some shredded green onion
Some shredded chili

娘惹豆酱鸡 Pongteh Ayam

材料:
半隻 鸡(切块)
2~3粒 马铃薯(切块)
6-8香菇 (切半)
1大匙 葱末
1大匙 蒜末
少許 姜片
1大匙 豆瓣酱


调味料:
15克 椰糖
半湯匙 黑酱油
2湯匙 醬油
1杯 水


Ayam Pongteh

Ingredient:
Half chicken (cut into pieces)
2 to 3 potatoes (cut into cubes)
6-8 shiitake mushrooms (cut in half)
1 tablespoon minced onion
1 tablespoon minced garlic
A little ginger slices
1 tablespoon bean paste

seasoning:
15g Palm sugar
½ tablespoon dark soy sauce
1~2 tablespoons soy sauce (to taste)
1 cup water

广式鱿鱼炒沙葛
Cantonese style Fried cuttlefish with yam beans

材料:
1粒 沙葛(500克)~(切丝)
1条 胡萝卜~(切丝)
芹菜~(切小段)
青葱~(切小段)
20克 鱿鱼丝
3瓣蒜~(剁碎)

调味:
少许 胡椒粉
少许 盐
2汤匙 酱油
1茶匙 黑嗮油

少许生菜


Cantonese style Fried cuttlefish with yam beans

Ingredients:
1 piece of yam beans (500g) ~ (cut into shreds)
1 carrot ~(shredded)
Green Celery~ (cut into small pieces)
Green onions~ (cut into small pieces)
20g shredded cuttlefish
3 cloves of garlic~ (chopped)

Seasoning:
a little white pepper
pinch of salt
2 tablespoon soy sauce
1 teaspoon dark soy sauce

青瓜排骨酸(Spare Rib with Pickled Cucumber and Salted Bean Paste)

材料A:
2 支排骨 (600克)
1  大匙豆瓣酱
1/2小匙蒜末
1公升清水
1条 青瓜
2条 辣椒


调味料:
1茶匙酱油
1 茶匙黑嗮油
1茶匙蚝油

腌制青瓜:
1 条青瓜(切条)用1茶匙盐拌匀,腌至10分钟,然后用清水冲洗一下
4大匙白米醋,2大匙糖

Ingredients
2 spare ribs (600g)
1 tablespoon bean paste
1/2 tsp minced garlic
800ml of water
1 cucumber
2 chillies


seasoning:
1 tablespoon soy sauce
1 teaspoon dark soy sauce
1 tablespoon oyster sauce

Pickled cucumber:
1 piece of cucumber (cut into strips), mix well with 1 teaspoon of salt, marinate for 10 minutes, then rinse with water
4 tablespoons white rice vinegar, 2 tablespoons sugar
