双菇烩鱼鳔
【Double Mushroom Braised Fish Maw】

材料:
* 鱼鳔 1条(浸泡至软,洗净)
* 花菇 6朵(去蒂,切半)
* 蘑菇 6朵(切片)
* 蒜头 8瓣(切片)
* 红萝卜 半条(切片或切条)
* 甜豆 10条(去头尾,洗净)
* 西兰花 半棵(切小朵)
调味料:

* 1汤匙 蚝油
* 1汤匙 酱油
* 少许 盐
* 少许 黑酱油
* 1汤匙绍兴酒

勾芡材料:
* 木薯粉 1茶匙
* 水 3汤匙

做法:
1. 西兰花焯水:烧一锅水,加入少许盐和食油,将西兰花放入焯水30秒,沥干备用。
甜豆焯水: 用同样的方法将甜豆焯水,沥干备用

2. 锅中倒入少量食用油,加入切好的蒜头爆香,炒至蒜香四溢。
3. 依次加入泡发好的花菇、红萝卜片和新鲜蘑菇,翻炒均匀。
4. 接着加入泡发好的鱼鳔,轻轻翻炒至所有材料稍微上色。
5. 倒入半杯清水,然后加入1汤匙蚝油、1汤匙酱油、少许黑酱油和盐,轻轻搅拌均匀。
6. 加入焯好的甜豆,拌炒均匀,保持鲜绿色泽。
7. 加入绍兴酒提香,提升风味。
8. 将1茶匙木薯粉与少量清水混合成勾芡浆,慢慢倒入锅中,一边搅拌一边加热,直到汤汁浓稠。
9. 将煮好的双菇鱼鳔盛入盘中,将西兰花围绕盘边作为点缀。

Material:
* 1 fish maw (soak until soft and wash)
* 6 flower mushrooms (remove stems and cut in half)
* 6 mushrooms (sliced)
* 8 cloves garlic (sliced)
* Half carrot (sliced ​​or cut into strips)
* 10 sweet beans (remove heads and tails, wash)
* Half a head of broccoli (cut into small florets)
Seasoning:

* 1 tablespoon oyster sauce
* 1 tbsp soy sauce
* a pinch of salt
* A little dark soy sauce
* 1 tablespoon Shaoxing wine

Thickening ingredients:
* 1 tsp tapioca flour
* water 3 tablespoons


practice:
1. Blanch the broccoli: Boil a pot of water, add a little salt and cooking oil, blanch the broccoli for 30 seconds, drain and set aside.
Blanch sweet beans: Use the same method to blanch sweet beans, drain and set aside.

2. Pour a small amount of cooking oil into the pot, add the chopped garlic and sauté until the garlic is fragrant.
3. Add the soaked mushrooms, carrot slices and fresh mushrooms in sequence and stir-fry evenly.
4. Then add the soaked fish maw and stir-fry gently until all ingredients are lightly colored.
5. Pour in half a cup of water, then add 1 tablespoon oyster sauce, 1 tablespoon soy sauce, a little dark soy sauce and salt, and stir gently evenly.
6. Add the blanched sweet beans and stir-fry evenly to keep the bright green color.
7. Add Shaoxing wine to enhance the flavor.
8. Mix 1 teaspoon of tapioca flour with a small amount of water to form a thickening paste, slowly pour it into the pot and heat while stirring until the soup thickens.
9. Put the cooked double mushroom fish maw into a plate and garnish with broccoli around the edge of the plate
