Thai Winged Bean Salad


食材:
* 四棱豆 10条左右 (切成薄片)
* 小番茄 6-8颗(切小块)
* 江鱼仔 1小把
* 大葱 2粒(切薄片)
* 小米辣 2-3根(切碎,可根据个人口味调整)
* 桔仔 3个/青柠檬 1个(榨汁)
* 鱼露 1汤匙
* 白糖 1汤匙
* 少许盐
* 烤香的腰豆/花生 2汤匙


做法:
1. 锅里倒入油,加入江鱼仔 炸至金黄色,沥干油,备用
2. 将四棱豆 洗净,去掉两端,切成薄片。放入碗中
3. 在一个碗中混合大葱,小米辣、小番茄,桔仔汁、白糖,盐,江鱼仔,烤香的腰/花生碎,搅拌均匀。
4. 将拌好的沙拉盛入盘中,即可享用!


小贴士:
这道沙拉酸甜微辣,非常适合作为餐点的配菜

Thai Winged Bean Salad


Ingredients:
* Winged beans – about 10 (sliced thinly)
* Cherry tomatoes – 6-8 (cut into small pieces)
* Dried anchovies – a small handful
* Red onions – 2 (thinly sliced)
* Bird’s eye chili – 2-3 (chopped, adjust to taste)
* Calamansi juice (from 3 calamansi) or lime juice (from 1 lime)
* Fish sauce – 1 tbsp
* White sugar – 1 tbsp
* A pinch of salt
* Roasted cashews or peanuts – 2 tbsp
Instructions:
1. Heat oil in a pan and fry the dried anchovies until golden brown. Drain excess oil and set aside.
2. Wash the winged beans, trim the ends, and slice them thinly. Place them in a bowl.
3. In a separate bowl, mix the red onions, bird’s eye chili, cherry tomatoes, calamansi juice, white sugar, salt, fried anchovies, and roasted cashews or peanuts. Toss well to combine.
4. Transfer the salad to a serving plate and enjoy!
Tips:
* This salad has a refreshing, tangy, and mildly spicy flavor, making it a great side dish for any meal.
