香煎黄尾鱼(Turmeric Fried Yellowtail)

材料:
* 7-10条黄尾鱼(或其他小型鱼,如沙丁鱼、鲭鱼)
* 1汤匙半黄姜粉(Turmeric Powder)
* 1汤匙咖喱粉(推荐用肉类咖喱粉,更香)
* 1茶匙盐
* 适量食用油(煎鱼用)

做法:
1. 黄尾鱼去鳞去内脏,洗净沥干水分。
2. 将黄姜粉、咖喱粉、盐混合均匀,涂抹在鱼身上,腌制30分钟,让鱼充分入味。
3. 热锅倒入适量油(油量要能覆盖鱼的底部),中小火加热至油温7成热。
4. 放入腌好的鱼,中小火煎至两面金黄香脆(大约3-5分钟一面)。
5. 煎好后捞出,沥油备用。


参巴辣椒酱(Sambal Belacan)

材料:
* 青辣椒(6条)
* 小米辣(2条,喜欢更辣可加量)
* 红辣椒(1条,剪段)
* 煎香的马来盏(1茶匙)
* 糖(1小勺)
* 少许盐
* 青柠汁 / 桔子水(1-2个)
* 酱油(1茶匙)


做法:
1. 所有材料(辣椒、Belacan、糖、盐)一起捣烂
2. 加入青柠汁 / 桔子水和酱油,拌匀即可。
3. 试味道,可根据个人口味调整辣度、甜度和酸度。


Turmeric Fried Yellowtail
Ingredients:
* 7-10 yellowtail fish (or other small fish like sardines or mackerel)
* 1 ½ tbsp turmeric powder
* 1 tbsp curry powder (meat curry powder is recommended for a richer flavor)
* 1 tsp salt
* Cooking oil (for frying)
Instructions:
1. Scale, gut, and clean the yellowtail fish. Pat dry.
2. Mix turmeric powder, curry powder, and salt evenly, then rub the mixture onto the fish. Let it marinate for 30 minutes.
3. Heat a pan and add enough oil to cover the bottom of the fish. Heat the oil over medium-low heat until it reaches about 70% hot.
4. Fry the marinated fish over medium-low heat until both sides turn golden brown and crispy (about 3-5 minutes per side).
5. Remove the fish from the pan, drain excess oil, and set aside.

Sambal Belacan (Spicy Shrimp Paste Sauce)
Ingredients:
* 6 green chilies
* 2 bird’s eye chilies (add more for extra spiciness)
* 1 red chili (cut into pieces)
* 1 tsp toasted belacan (shrimp paste)
* 1 tsp sugar
* A pinch of salt
* Juice of 1-2 calamansi limes or key limes
* 1 tsp soy sauce
Instructions:
1. Pound all ingredients (chilies, belacan, sugar, and salt) into a paste using a mortar and pestle.
2. Add lime juice and soy sauce, then mix well.
3. Taste and adjust the spiciness, sweetness, and acidity according to your preference.
