一起来做“开心果葡式蛋挞“,烤好满屋都是开心果和蛋香味,两下家人就吃完了,还重复做了几轮。采用了自家烤香的开心果来制作开心果酱,自己制作所以加了蛮多的开心果酱入蛋液中增添香味,因此蛋液比原味葡式蛋挞更浓厚,烤时会膨胀成气球稍微开裂,凉后会稍微回缩,上面烤出艺术型的小焦点们,经典的葡式蛋挞标记。这次就直接采用了现成酥皮挞皮,超快速方便。 烤好放温吃最佳,一口听到层层酥脆的声音,上面的点点的焦香味,中间的奶香+开心果香蛋液,加上顶部更多开心果酱和酥脆开心果颗粒,吃起来口感很好,很香。

收存方式:烤好放凉5-10分钟脱磨立刻吃最佳。凉透后收密封容器,放普通冰箱。隔天可以冷吃/toaster中火弄热一下之后放凉,饼皮酥回了再吃,就会像刚烤一样。

Let's make "Pistachio Portuguese Egg Tarts". The whole house is filled with aroma of pistachios and eggs. My family finished eating in no time, so repeated making them for several times. Freshly baked pistachios are used to make pistachio paste. Since homemade, we get a lot of pistachio paste to egg liquid to enhance flavor, thus egg custard is thicker than original Portuguese egg tarts. When baked, it will expand into a balloon and crack slightly. After cooling, will shrink slightly, with small rusting looking burnt spots appearing, classic Portuguese egg tart signature. This time, I directly used ready-made puff pastry tart shell, super fast and convenient. Best eaten warm after baking. When bite, can hear the crispy sound of puff pastry layers, little bit of caramelized aroma on top, milky + pistachio-flavored egg custard within, more pistachio paste and crunchy pistachio pieces on top. Good taste, texture and fragrance.

Storage method: Best eaten when let cool 5-10minutes after baked remove from tart mould. Let cool completely, put it in airtight container and store in normal fridge. Next day eat them cold/medium heat up using toaster and let cool until crust turn back flaky before eating.



♦Ingredients食材=9pcs Pistachio Egg Tarts开心果蛋挞=
9pcs Puff Pastry Tart Shell 千层酥皮挞皮 (Top顶:7cm x Bottom底: 4cm x Height高: 2cm)

=Pistachio Paste开心果酱=
115g Pistachio Nuts 开心果
7g Pure Pistachio Paste (Optional) 纯开心果酱(可选)
0.5g Vanilla Extract 香草精
20g Icing Sugar 糖粉
1g Salt 盐
12g Peanut Oil (add in few additions) 花生油 (分次加入)

=Pistachio Egg Custard 开心果蛋液=
90g Milk 牛奶
15g Caster Sugar 细砂糖
110g Dairy Whipping Cream 动物性淡奶油
40g Egg Yolks 蛋黄
40g Pistachio Paste 开心果酱

(Preheated oven 200C: 20-22minutes (Top Bottom Heat, No Fan Force, 4th Rack)
(After baked, switch off, oven door ajar slightly, simmer 5minutes)
(预热烤箱200C: 20-22分钟, 上下火,不开旋风,第四层烤)
(烤好关电, 烤箱门开一些, 焖5分钟)
