看了《水饺皇后》电影后,家人们纷纷让我尝试做水饺,一起做“白菜香菇鸡肉水饺”。一口气从饺子皮,馅料直到蘸酱都是自制。馅料可以根据喜好加不同的蔬菜和酱料来调味,鸡肉用了约70%鸡腿30%鸡胸来调和油脂和口感,即不会太油腻或干材。饺子皮揉面休息到位,杆出周围薄中间厚的包片,包成3种整型,包括水饺皇后里的元宝饺子,柳叶饺子和月牙湾饺子。用滚烫热水点水的方式来煮水饺。新鲜出炉热乎乎水饺,饺子皮透亮隐约露出肉馅来,保留着明显折子。趁热立刻吃,口感柔软且有嚼劲最佳,皮薄馅厚,咸香肉馅搭配白菜香菇青葱甜味,再粘上辣椒醋蘸酱,很香,垂涎三尺~

收藏方式:趁热立刻吃,口感最佳。剩余未煮但包好的水饺,可以先撒粉放烤盘各别冻硬(防止粘连一起)再收密封容器放冰库冷冻,新鲜7天内吃完。要吃无需解冻,直接冷水下锅煮至沸腾再点水步骤。

After watching movie 《Dumpling Queen》, my family kept on asking me to try making water dumplings. Let’s make "Chinese Cabbage Mushroom Chicken Water Dumplings." Make from scratch all the way from dumpling wrappers, fillings till dipping sauce. Fillings can be seasoned with different vegetables and sauces to your liking. The chicken is about 70% thigh and 30% breasts to balance the fat and texture, making it neither too greasy nor dry. When dumpling skin is well kneaded and rested, roll into thin edges thick center wrappers, formed into three shapes: Ingot, Leaf-shaped, and Crescent dumplings. Use hot boiling water add water technique to cook water dumplings. Once cooked, dumplings skin turns shiny translucent, slightly reveals meat filling, while retaining clear pleats. Best eaten hot, soft yet chewy texture. Thin wrappers thick fillings, combine to create a savory meat filling with sweetness of Chinese cabbage, mushrooms, and scallions, covered with chili vinegar dipping sauce, incredibly fragrant and mouth-watering.

Storing method: Best eaten while hot. For remaining uncooked but wrapped dumplings, first freeze individually till harden on floured baking tray (prevent them from sticking together), then store in airtight containers and freeze in freezer, fresh eaten in 7days. Before eating, no need to thaw, directly place in cold water and cook until boiling, then continue step of adding water.

150g Chicken Thigh 鸡腿
50g Chicken Breast 鸡胸
2g Minced Ginger姜末
0.5g(¼tsp) Five Spice Powder五香粉
0.5g(¼tsp) Pepper Powder胡椒粉
1.5g(½tsp) Mushroom Seasoning Granules 蘑菇调味粒
10g (½Tbsp) Soy Sauce生抽/酱油
5g (¼Tbsp) Dark Soy Sauce 黑酱油
7g (½Tbsp) Sesame Oil麻油
5g (¼Tbsp) Oyster Sauce 蚝油
25g Egg鸡蛋
130g Chinese Cabbage 白菜
1.5g(½tsp) Salt for Cabbage白菜的盐
17g Green Onions/Spring Onion小青葱
12g Dried Shiitake Mushroom 干香菇
0.4g(1/8tsp) Salt for Mushroom香菇的盐

16g (1Tbsp) Oyster Sauce 蚝油
15g (1Tbsp) Dumpling Soup 饺子汤
