中秋将至,一起来做传统酥皮月饼,“西瓜酥月饼”。千层酥皮,这次采用了大包酥方式来开酥,一次过可以做8颗月饼,省时省力。外皮酥脆掉渣,层次分明,带有红白青混色,加上黑芝麻点缀,形成小西瓜,超可爱~烤好满屋香味,内馅用了少甜白莲蓉馅,搭配脆口瓜子,咸香流油咸蛋黄,口味超香却不甜腻。好看又好吃。

收藏方式:烤好放凉立刻吃最好,室温3-5天内吃完,凉透收密封容器,要收更久就放冰库冷冻,吃前解冻,toaster中火烤热,放凉酥皮脆回,温吃。

Storage Method: Best eaten once freshly baked and cooled. Consume within 3-5 days at room temperature. Cool thoroughly, put in airtight container. To keep longer, store in the freezer. Thaw and toast over medium heat. Let cool till pastry crispy back and serve warm.

240g Less Sweet White Lotus Fillings 少甜白莲蓉馅
8pcs Charcoal Marinated Salted Eggs (soaked in rice wine, vegetable oil) 黑炭腌制咸蛋(浸米酒,植物油)
24g Melon Seeds 瓜子
(Top Bottom Heat, No Fan Force, Middle Rack)
(Preheat oven 170C: 5-6 minutes)
(上下火,不开旋风,中层烤)
(预热烤箱170C: 5-6分钟)

93g All Purpose Flour 普通中筋面粉
20g Caster Sugar 细砂糖
1g Salt 盐
34g Unsalted Butter 无盐牛油
38g Water 水

=Oil Dough 油皮 (8pcs)=
100g All Purpose Flour 普通中筋面粉
55g Unsalted Butter 无盐牛油
Red, Green Food Coloring 红,青食物色素

=Toppings 装饰=
Black Sesame Seeds 黑芝麻

(Top Bottom Heat, No Fan Force, 4th Rack)
(Preheat oven 170C: 30-35 minutes)
