It’s considered the “白月光Ideal lover” of the mooncake world, because its appearance is pure and delicate like white jade. Filling is made with plenty of black sesame and walnuts, while outer skin is made with cooked glutinous rice flour, rice flour, and maltose syrup, giving them soft, chewy texture yet not sticky, not overly sweet. Rice mooncakes can be either baked or unbaked. Personally, I choose to bake them, but only for 5 minutes—just enough to keep their shape set, making them easier to package and handle. Rice mooncake can imprint clear mould patterns. Rice white paired with natural green tea color, full of traditional Chinese charm. When torn apart, loaded with black sesame aroma, crunchy walnuts, wrapped in fragrant rice aroma outer skin. The texture is reminiscent of black sesame tangyuan/ mochi—fragrant, and not greasy. Absolutely delicious! Storage method: Put in airtight container 2-3days at room temperature.
