马脚│牛脷酥│酥脆甜芝麻香 │不油不腻Horse Hoof Doughnuts ( Ma Kiok )

嗨!大家好!我是傻大姐,来自马来西亚。今天我们来做马脚,也叫马耳, 牛脷酥,做法和油条差不多。是传统的中式油炸面食。


材料 A:
200克 中筋面粉
1/2茶匙 苏打粉
60克 幼糖
1/2茶匙 即溶酵母 (+ 1汤匙温水化开)
1/2茶匙 盐
1汤匙 食油
110毫升 水

甜面糊:
2汤匙 细砂糖
1汤匙 面粉
1汤匙 热水

点缀:
白芝麻 适量


做法:

1.把全部材料A搓成团,发酵1-2个小时或双倍大。
2.把面团杆成长方形,大约1cm厚。
3.把甜面煳抹上,然后铺上白芝麻,再撒点面粉
4.往上对折。切成条状。将涂有糖浆的那面翻向外,接口稍微捏紧。
5.热油,炸至金黄色,捞起,即可享用。

Hi! Hello everyone! I am Shadajie from Malaysia. Today we are going to make Horse Hoof Doughnuts ( Ma Kiok ) , also called horse ears, which are similar to cakoi . It is a traditional Chinese fried breadstick.

Horse Hoof Doughnuts ( Ma Kiok )

Ingredients A:
200g all-purpose flour
1/2 teaspoon baking soda
60g sugar
1/2 teaspoon instant yeast (+ 1 tablespoon warm water to melt)
1/2 teaspoon salt
1 tbsp cooking oil
110ml water

Sweet batter:
2 tablespoons caster sugar
1 tbsp flour
1 tbsp hot water

Embellishment:
White sesame seeds


Practice:

1. Knead all ingredients A into a dough and ferment for 1-2 hours or double the size.
2. Cut the dough rod into a rectangular shape, about 1cm thick.
3. Spread the sweet batter, then spread white sesame seeds, and sprinkle some flour on top
4. Fold up in half. Cut into strips. Turn the side coated with syrup outwards and pinch the joint slightly.
5. Heat oil, fry until golden brown, pick up, and enjoy.
