嗨!大家好!我是傻大姐!也是一個愛好煮食,烘培者!

五仁月餅是很經典的月餅口味之一,它可以用多種堅果仁來配搭如: 花生仁,葵花仁,核桃仁,西瓜仁,杏仁,南瓜仁,白芝麻,黑芝麻,腰果仁..等等。幹果類可以選用糖漬橙皮,葡萄幹,糖冬瓜,柑橘蜜餞,桔餅, 蔓越莓幹..等。這食譜的五仁月餅吃進嘴裏口味香甜、綿軟帶酥,嚼起來那叫一個香!

分量 : 5個 100克的伍仁月餅

月餅皮材料:
100克 低筋面粉
60毫升 轉化糖漿 (Golden Syrup)
30毫升 食油/花生油
1茶匙 堿水

內餡材料

A(堅果/幹果類):

40克 核桃仁 (切半)
40克 杏仁 (切半)
25克 葵花仁
25克 瓜子仁
25克 南瓜仁
25克 白芝麻仁
25克 糖冬瓜
40克 桔餅

B
40毫升 轉化糖漿
1湯匙 油(15毫升),1茶匙 麻油(5毫升)
10克 細砂糖
1/4 茶匙 鹽
60克 糯米粉(炒熟)/糕粉


塗面:
1粒蛋黃+1湯匙清水

做法:
1.把月餅皮材料混合均勻,蓋上蓋子,然後放置2小時。
2.核桃、杏仁、葵花仁和瓜子仁,南瓜仁和白芝麻仁以175設氏度烤8-10分鐘
3.桔餅、糖冬瓜切成碎粒,備用
4.把A和B混合,翻拌均勻,能壓團,然後分成每份65克,備用。
5.將一份伍仁餡包上一份月餅皮35克,放入灑上粉的餅模內,壓實後敲出置放在烘盤內。
6.預熱烤箱160設氏度,烤10分鐘,取出,塗上蛋液,再烘烤10分鐘至上色。
7.2天回油後,就會油亮,餅皮松軟好吃,口味香甜

It can be matched with a variety of nut kernels such as: peanut kernels, sunflower kernels, walnut kernels, watermelon kernels, almonds, pumpkin kernels, white sesame seeds, black sesame seeds, cashew nuts...etc. Etc. For dried fruits, you can choose Chinese tangerine, raisins, sugar winter melon, candied citrus, dried cranberries, etc. Assorted Fruits & Mixed Nuts Mooncakes of this recipe taste sweet, soft and crispy when eaten in your mouth, and they are delicious when chewed!

Homemake Assorted Fruits & Mixed Nuts Mooncakes

5pcs 100g Mixed Nuts Mooncakes

Ingredients (Mooncake skin):
100g low-gluten flour
60ml Golden Syrup
30ml cooking oil/peanut oil
1 teaspoon alkaline water/lye

Ingredients (Filling )

A (nuts/dried fruits):

40 g walnuts (cut in half)
40g almonds (cut in half)
25g sunflower kernels
25g melon seeds
25g pumpkin kernels
25g white sesame seeds
25g Candied Winter Melon
40g Dried chinese tangerine

B
40ml golden syrup
1 tbsp oil (15 ml), 1 tsp sesame oil (5 ml)
10g caster sugar
1/4 teaspoon salt
60g glutinous rice flour (fried)/koh fun


egg wash:
1 egg yolk + 1 tablespoon water

Practice:
1. Mix the mooncake skin materials evenly, cover with the lid, and then leave for 2 hours.
2. Walnuts, almonds, sunflower kernels and melon seeds, pumpkin kernels and white sesame kernels are roasted at 160 degrees for 10 minutes
3. Cut Candied Winter Melon and Candied Winter Melon into smashed pieces and set aside
4. Mix A and B and mix them evenly to form a dough, and then divide them into 65 grams each and set aside.
5. Wrap a portion of mix nut stuffing with a portion of 35 grams of mooncake skin, put it in a cake mold sprinkled with plain flour, and knock out and place it in a baking tray after compaction.
6. Preheat the oven to 160 degrees, bake for 10 minutes, take it out, coat with egg wash, and bake for another 10 minutes until it is colored.
7.After 2 days of oil return, it will be shiny, the crust will be soft and delicious, and the taste will be sweet
