好吃松軟傳統公仔餅,回油後特香 Traditional mooncake biscuits

嗨!大家好!我是傻大姐!也是一個愛好煮食,烘培者!
傳統公仔餅, 材料便宜簡單,花費不多。這個食譜,添加了少許的蘇打粉,讓公仔餅烤出來後,更加松軟。另外,為了讓油水要充足,我增加了糖漿的分量,所以面糊需要長時間休面松弛,大約4-6個小時,這樣做出來的公仔餅就會松軟。剛出爐的公仔餅表皮帶硬,而且有很重的焦糖味,因此須要放置一旁2,3天讓它回油,不要密封,蓋上布,在室溫下自然回軟就可以了。


傳統松軟公仔餅
Traditional mooncake biscuits

材料 :
150毫升 轉化糖漿 /糖油
60毫升 食油/花生油
1/2 茶匙 食用梘水
200克 底筋面粉/中筋面粉
1/2 茶匙 蘇打粉
蛋黃 1 粒 (塗層,掃面用)

作法:
1. 混合糖漿,食油和梘水,加入過篩的底筋面和粉蘇打粉拌勻。
2. 拌好的材料呈糊狀,而且非常粘手,讓面糊至少休息4小時
3. 如果面團還是有點粘手,可以沾點面粉,一粒大約25克,搓圓,放在已經墊上油紙或塗油烤盤中,可以在表面放點瓜子
4. 預熱烤箱, 160度, 烤10分鐘,取出再掃一層蛋液,再烤10分鐘至表面金褐色即可。

Traditional mooncake biscuits, the ingredients are simple and the price is not expensive. In this recipe, a little soda powder is added to make mooncake biscuits softer after baking. In addition, in order to make the oil and water sufficient, I increased the amount of golden syrup, so the batter needs to rest for a long time, about 4-6 hours, the outcome will be soft. The freshly baked doll cake has a hard belt and a heavy caramel taste, so it needs to be left aside for 2-3 days to let it return oil. Just cover it with a clean cloth, and let it soften naturally at room temperature.

Traditional mooncake biscuits

Ingredients :
150ml golden syrup
60ml cooking oil/peanut oil
1/2 teaspoon alkaline water
200g low gluten flour / all purpuse flour
1/2 tsp baking soda
1 egg yolk + 1 tsp water (for egg wash)

practice:
1. Mix the syrup, cooking oil and alkaline water , the add the sifted flour and baking soda, mix well.
2. The mixed ingredients are paste-like and very sticky. Let the batter rest for at least 4 hours
3. If the dough is still a bit sticky, you can dip some plain flour, about 25g per doll , round it, and place it in a greased paper. You can put some melon seeds on the top
4. Preheat the oven, 160 degrees, bake for 10 minutes, take out and sweep a layer of egg wash, and bake for another 10 minutes until the surface is golden brown.
