入口即化的傳統番婆餅/薯粉餅 Tapioca Cookies/Kuih Bangkit

番婆餅 /薯粉餅,是新年必有的糕點。要做出椰奶味濃郁和入口即化的番婆餅,首先需要花些時間把粉準備好。我們今天用烤的,這樣粉就不會到處亂飛, 烤過的粉,會變得很輕(我用450克的粉,烤好後,變成大約300克的粉)



傳統番婆餅/薯粉餅 Tapioca Cookies/Kuih Bangkit

材料:
木薯粉 350克
玉米粉/沙谷粉 100克
蛋黃 2粒
細紗糖 70克
濃椰奶 170克
4-5片 斑蘭葉 剪段4-5片


(預熱烤箱150C: 25-28分鐘)
(上下火,不開旋風,中層烤)

做法:
1.350克木薯粉 ,100克 玉米粉 和香蘭葉混合在烤盤裏,放入已預熱烤爐,以150°C 烘烤 1½小時(上下火,不開旋風,中層烤)
2.烤好後,放置冷卻,冷卻後放入容器備用,烤好的粉,放置1-2天後才用。
3.用攪拌器將2粒蛋黃打散,加入70克 細紗糖 (分兩次加入)中速拌打至濃稠和淺黃色,之後加入170克濃椰漿攪勻(別倒完,留著20克做調整)
4.取出香蘭葉,加入270克的粉(過篩),剩下的留下當手粉用
5.把粉搓成團,如果太乾,加入少許的濃椰漿,番婆餅的粉必須是稍微乾的,不可以太溼,太溼就不會有入口即溶的口感了
6.模具沾上少許粉,拿少許麵糰,裹上模型內,切掉多余的粉團後,將粉團敲出來
7.烤盤塗上一層粉,把粉團排放在烤盤上, 放入預熱烤箱,以160°C 烤25-28分鐘。

To make a Kuih bangkit that has a rich coconut milk flavor and melts in your mouth, you first need to take some time to prepare the flour. Kuih Bangkit,

Ingredients:
350g tapioca flour
100g Corn flour/sago flour
2 egg yolks
70g caster sugar
170g Thick coconut milk
4-5 pieces of pandan leaves, cut into sections

Practice:
1.350 g cassava flour, 100 g corn flour and pandan leaves are mixed in a baking dish, put in a preheated oven, and bake at 150°C for 1½ hours (up and down fire, no whirlwind, middle-level baked)
2. Put it in a container after cooling. The baked flour should be placed for 1-2 days before use.
3. Use a mixer to beat 2 egg yolks, add 70g of caster sugar (add in two addition) and mix at medium speed until thick and light yellow, then add 170g of thick coconut milk and stir evenly (don’t finish pouring, save 20g for adjustment)
4. Take out Pandan leaves, add 270g of baked tapioca flour (sift), leave the rest as hand flour
5. Knead the flour into a dough. If it is too dry, add a little thick coconut milk. The flour of the Tapioca Cookies must be slightly dry, not too wet. If it is too wet, it will not melt in the mouth.
6. Dip a little baked tapioca flour on the mold, take a little dough, wrap it in the model, cut off the excess dough, and knock out the dough
7. Coat the baking pan with a layer of flour, place the dough on the baking pan, put it in the preheated oven, and bake at 160°C for 25-28 minutes.
