黑糖馬來糕 Steamed Malay Cake(Ma Lai Go) #黑糖馬來糕 #Steamed Malay Cake 我們今天分享的是黑糖馬拉糕,一種傳統的廣式茶樓點心。這款馬拉糕,口感非常松軟!口感也更棒!要做出口感松軟如綿的馬來糕,必須用竹蒸籠,一般的烤盤,成品會比較實,沒那麼蓬松哦。 黑糖馬來糕 Steamed Malay Cake(Ma Lai Go) 材料: 椰漿/淡奶 90 ml 黑糖 70克 雞蛋 (A級) 2個 酵母 3克 普通麵粉 90克 泡打粉 1/2 茶匙 玉米油 1湯匙 少許瓜子 做法: 1. 把90毫升椰漿和70克黑糖混合至黑糖溶解 2. 加入2個雞蛋, 3克酵母拌勻 3. 加入90克普通麵粉(分兩次加入,攪拌至無顆粒) 4. 用濾網把面糊過篩,蓋上蓋子,讓面糊醒發1小時 5. 醒發好後,加入1湯匙玉米油攪拌至混合 6. 取出2湯匙麵糊,加入1/2 茶匙泡打粉拌勻,麵糊再倒囘盆中一起混合 7. 把6吋的竹蒸籠鋪上不沾烤盤紙,倒入麵糊,震出小氣泡,然後鋪上瓜子 8. 水滾後,中火蒸30分鐘(中間別開蓋)蒸好後,悶3分鐘,才開蓋 Steamed Malay Cake is a traditional Cantonese tea house dessert. Steamed Malay Cake(Ma Lai Go) material: 90ml Coconut milk/evaporated milk 70g brown sugar 2 eggs (grade A) 3g Yeast 90g plain flour 1/2 tsp of baking powder 1 tablespoon of corn oil A few melon seeds practice: 1. Mix 90ml coconut milk and 70g brown sugar until the brown sugar is dissolved 2. Add 2 eggs, 3g of yeast and mix well 3. Add 90g of plain flour (add in two times and stir until there are no particles) 4. Sift the batter with a strainer, close the lid, and let the batter ferment for 1 hour 5. After fermented, add 1 tablespoon of corn oil and stir until combined 6. Take out 2 tablespoons of batter, add 1/2 teaspoon of baking powder and mix well, then pour the batter back into the basin and mix together 7. 6-inch bamboo steamer fill with non-stick parchment paper, pour the batter, shake out small bubbles, and then spread the seeds 8. After the water boils, steam on medium heat for 30 minutes (don't open the lid in the middle).
