鬆脆的鷄蛋餅/扇餅/夾必糕 - Kuih Kapit/Love Letters #扇餅 #Kuih Kapit 新年當然少不了這款年餅-扇餅(Kuih Kapit)。薄薄脆脆的扇餅放入口裏,濃郁的雞蛋與焦糖香味的餅皮瞬間在口裏化開。不知不覺中就會吃不停口!這次不用火炭,就用煤氣火爐烤,清潔又簡單,在家裏就可以製作! 鷄蛋餅/扇餅/夾必糕 Kuih Kapit/Love Letters 材料 Ingredients: 粘米粉 100克 雞蛋/甘榜蛋 5粒 木薯粉 1大匙 (12克) 清水 60ml 細砂糖 150g(不吃甜的,可以減20-30克左右) 椰漿 200ml 做法 : 1.將 5粒鷄蛋弄散(別打發),加入150克 細砂糖 攪拌 2.再加入100克 粘米粉,1大匙木薯粉,60ml清水 和 200ml 椰漿,攪拌均勻 3.將攪拌好的面糊過濾兩次,蓋上蓋子,靜置15分鐘 4.接下來就準備烘烤的步驟,在火爐上放上一個鉄架,扇餅模先凃上一層油,開小火,將摸烤熱. 5.將面糊倒入扇餅模裏,關好模並在火炭上烘烤,烘烤時需要翻轉餅模,讓兩面平均受熱。 6.用小刀背,刮掉模邊的碎餅,烤至淺棕色後,用小刀將餅取出,折成四分就形成了一扇餅。 7.重復這步驟至剩下的面糊都烘烤完成。 8.待扇餅涼了之後,馬上放入儲密封的罐子裏 Kuih Kapit/Love Letters Ingredients: 100g Rice Flour 5 eggs/kampong eggs 1 tablespoon of tapioca flour (12g) 60ml water 150g caster sugar (do not eat sweet, you can reduce about 20g) 200ml Coconut milk Practice: 1. Put a steel rack on the stove, coat the Love Letters mold with a layer of oil, turn on a small fire, and heat. 5. Pour the batter into the Love Letter mold, close the mold and bake on the gas stove. When baking, you need to turn the Love Letter mold over to heat both sides evenly. 6. Use the back of a small knife to scrape off the Love Letter crust on the side of the mold.
