香脆炸慈菇/芽菇片 Crispy Fried Arrowhead Chips #芽菇 #Arrowhead Chips 每年農歷新年,我家裏肯定少不了“慈菇餅”。“慈姑”,只有農曆新年這段時間才有賣,所以是很珍貴的!吃過的人都懂,慈菇口感脆脆的,一吃就停不了口!今年就來自己動手做吧!做法超簡單! 香脆炸慈菇/芽菇片 Crispy Fried Arrowhead Chips 材料: 慈菇 1公斤 油 750 毫升 鹽 適量 做法: 1.先把慈菇去皮,洗凈(慈菇,必須選有蒂的,方便刨片) 2.把慈菇放在水盆裏,加入1大湯匙鹽。泡浸20分鐘(讓慈菇味道均勻避免慈菇氧化變黑) 3.泡浸好後,把慈菇撈起,放入一條乾凈的白布/紗布,抹乾水分 4.倒入約 750 毫升的油,把油溫熱 (放入筷子,如果有泡泡就可以開始炸了) 5.手捉著慈菇蒂,直接將慈姑削片入油鍋 6.炸慈菇的時候剛開始是有氣泡的,等到氣泡消了,就代表芽菇炸熟透了,炸至稍微金黃色即可撈起。 7.撈起時,稍微搖一搖滴幹多余的油,放在吸油紙巾上面,撒上少許的鹽 8.慈菇片放涼後,立刻裝入密封的罐子裏,避免漏風 Every Lunar New Year, "Arrowhead Chips" is definitely indispensable in my family.
