南瓜雙色饅頭,松軟香甜
Pumpkin Steamed Buns

份量 : 16-18個

材料:
👉南瓜麵糰
100克 南瓜泥
150克 中筋麵粉 (過篩)
2克 酵母
20克 細砂糖

👉白色麵糰
150克 中筋麵粉
20克 細砂糖
2克 酵母
80毫升 清水

做法:
👉南瓜麵糰
1.南瓜去皮切片,放入蒸籠,去皮後大約100克,大火蒸15分鐘
2.趁熱,加入20克 細砂糖,用叉子壓成泥狀
3.待溫度降低後,加入2克 酵母,拌勻
4.將150克 中筋麵粉 (過篩),加入南瓜泥,攪拌成絮狀
5.在揉的過程中,如果粉團粘手,可以加入少許麵糰
6.揉成為一個不黏手,光滑的的麵團
7.蓋上保鮮膜,發酵45分鐘

👉白色麵糰
1.將150克 中筋麵粉 (過篩),20克 細砂糖,2克 酵母,加入80毫升 清水 ,攪拌成絮狀
2.揉成為一個不黏手,光滑的的麵團
3.蓋上保鮮膜,發酵45分鐘

做法:
1.兩個麵糰發酵好後,砧板和麵團上都灑些麵粉
2.分別用拐面杖桿開,面團反復摺疊,桿開按壓排氣,過後搟成薄片
3.將兩個面團相疊,之後再拿搟麵棍上下左右桿開
4.切掉角邊的麵片,將兩塊面片慢慢卷起來,用刀切成18粒。
5.用乾凈的布蓋住,再次醒發20分鐘
6.冷水上鍋,中火蒸15分鐘
7.關火後再燜5分鐘,開小縫,讓熱氣流出,避免饅頭回縮皺皮

practice:

3. Stack the two dough on top of each other, and then use the dough stick to open up, down, left, and right
4. Cut off the noodles at the corners, roll up the two noodles slowly, and cut into 18 pieces with a knife.
5. Cover it with a clean cloth, and let it rise again for 20 minutes
6. Pot in cold water, steam on medium heat for 15 minutes
7. Turn off the heat and simmer for another 5 minutes, open a small slit to let the hot air out, to avoid the buns from shrinking and wrinkling
