這道是我們常見的美式曲奇餅,因爲家裏小孩很愛吃Famous Amos巧克力曲奇,所以就研究這款曲奇餅的做法,這一款【巧克力曲奇餅】的做法非常的簡單,不容易失敗!吃起來的口感外脆內軟, 加上巧克力豆的結合非常好吃!糖的分量別減,不然會影響酥脆口感!


食譜:
110克 無鹽奶油(溫室暖化)
120克 紅糖
60克 細糖
12克 麥芽奶粉/好力克/阿華田
1/2 茶匙 鹽
1茶匙 香草精
1粒 鷄蛋 (Grad-B)
180克 低筋麵粉
10克 玉米粉
1茶匙 泡打粉
1/2 茶匙 蘇打粉
120克 黑巧克力豆
做法:
1.將110克 無鹽奶油,120克 紅糖,60克 白糖,12克 好力克,1/2 茶匙 鹽,1茶匙 香草精混合一起,然後用打蛋器攪拌均勻 (低速打2分鐘左右,無需打到糖融化)
2.打入1粒雞蛋(繼續低速拌打1分鐘)
3.將180克 低筋麵粉,10克 玉米粉,1茶匙 泡打粉,1/2 茶匙 蘇打粉拌勻
4.將面粉加入(過篩),利用刮刀拌勻
5.最後加入120克黑巧克力豆攪拌均勻
6.用保鮮膜包住,放入冰箱下格冷藏24小時/48小時/72小時(冷藏後的口感更酥脆,濃鬱,有嚼勁)
7.冷藏好後,用小茶匙舀半勺巧克力面糊(大約4克一粒),弄成長形,然後放直在烤盤上
8.先預熱烤箱,160度,烤10分鐘
9.放置冷卻後,餅餅就會硬了
10.冷卻後的巧克力曲奇,立刻裝入罐子。

Ingredients:
110g unsalted butter
120g brown sugar
60g fine sugar
12g malted milk powder/Horlicks/Ovaltine
1/2 teaspoon salt
1 teaspoon vanilla extract
1 egg (Grad-B)
180 g low-gluten flour
10g corn flour
1 teaspoon baking powder
1/2 teaspoon baking soda
120g dark chocolate beans
practice:
1. Mix 110 grams of unsalted butter, 120 grams of brown sugar, 60 grams of white sugar, 12 grams of Horlicks, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract, and then use a whisk to stir evenly (low speed for about 2 minutes, no need Beat until the sugar melts)
2. Beat in 1 egg (continue to beat at low speed for 1 minute)
3. Mix 180g low-gluten flour, 10g corn flour, 1 teaspoon baking powder, 1/2 teaspoon baking powder and mix well
4. Add in flour (sift) and mix well with a spatula
5. Finally add 120 grams of dark chocolate beans and stir well
6. Wrap it with plastic wrap and put it in the lower compartment of the refrigerator for 24 hours/48 hours/72 hours (the taste after refrigeration is more crispy, rich and chewy)
7. After refrigerating, use a small teaspoon to scoop half a spoon of chocolate batter (about 3-4g each), make it into a long shape, and then put it straight on the baking tray
8. First preheat the oven, 160 degrees, bake for 10 minutes
9. After cooling, the cookies will be hard
10. Put the cooled chocolate chip cookies into the jar immediately
