Wish to eat mooncake but don’t wanna wait 3 days to return oil? Recommend you to make Snowy Mooncakes. The method is straightforward, no bake recipe. With accurate ratio recipe, you can make snowy mooncakes with soft, glutinous yet non-sticky texture, and solid yet not hard fillings. Today, I used natural fruit vegetable powder and matcha powder to make 4 different pastel color series, so natural and dreamy. When snowskin is kneaded just right, can be cut steadily after freezing, even with stringpull effect when pull apart. The filling is cooked not too dry not too wet, texture is just right after freezing, the milk flavor just right, fragrant but not too sweet. Snowy Mooncake has snow skin as its name suggests, so it’s not baked, made by steaming starch throughout the process. Thus, recommended to store in freezer to keep the original softness and glutinous. Glutinous rice flour gives soft glutinous texture; rice flour gives smoothness and non-stickiness; Wheat Starch gives crystal translucent appearance, so none is dispensable. Storage method: Put in airtight container, freeze for 1-2 hours, and serve immediately for the best taste. To keep it longer, freeze in the freezer and thaw before eating to keep original softness and glutinous.
