White Lover Cookies. It is made out of two very thin Cat’s Tongue Cookies/Langue De Chat from France, with 2mm chocolate slice sandwiched in between. As I was unable to buy in time the square template specially made for White Lover cookies, self-made by sticking 4 pieces of cake box to cut out the mould of 4.5cmx4.5cmx0.2cm squares. White Lover Cookies tastes the best when eaten cold after 3 days in the refrigerator. The cookies are still flaky crispy but easier to dissolve, paired with good quality white/dark chocolate, it makes you feel in love. To make cat’s tongue cookies, we need master the consistency and moisture of the batter. Cat’s tongue cookies are characterized by matte rough surface, golden brown yet thin edges, and crispy entirely. A slight reduction in sugar/adding flour/overwhipped egg white will not achieve the correct texture. This time also choose to on fan force for oven settings, so that the thin cookies golden browned evenly on the four corners in a short baking time, while still maintaining the cream color in the middle without over-baking. If your oven dont have fan force settings, suggest to increase oven temperature by 10c, ensure to keep an eye on the color. Storage Method: After cat’s tongue cookies are baked and cooled thoroughly, immediately keep in airtight container at room temperature to prevent the biscuits from being moisten/soften. After filled Shiroi Koibito with chocolate slice, keep in airtight container and chill in normal fridge, best eaten cold after 3days.
