香气十足,鬆软又溼润的香蕉蛋糕 The Best banana cake

香蕉蛋糕一直都是受很多人欢迎的。要香气十足的香蕉蛋糕有个秘诀,就是香蕉必须完全熟透,最好表皮已变黑那种,我用的是红肉蕉,这品种的烤起来很漂亮。喜欢鬆软溼润口感的朋友们可以参考这个配方,不油不腻,减少了糖的分量,不会太甜。真的又香又好吃,吃到停不了口。

香气十足,鬆软又溼润的香蕉蛋糕 The Best banana cake


材料:
鸡蛋2颗(去壳淨重120g)
无盐牛油50g (加温融化成液体)
低筋麵粉100g
细砂糖50g
香蕉200g (去皮后)
苏打粉 1/2茶匙
泡打份 1/2茶匙
盐 1/4茶匙
香草精 1/2茶匙 (可以不要放,放了特别香)


香蕉海绵蛋糕模
20cm X 11.3cm X 5.5cm 长方形烤盒1个 (3’s loaf pan)

做法:

1.香蕉放在碗裡用叉子压成泥
2.鸡蛋放入盆中,加入细砂糖用打蛋器高速搅打起泡泡,全蛋打发(糖分开2次加入)
3 打到蛋煳蓬鬆泛白,可以画下8字形即可(全程约6-8分钟)
4.加入香蕉泥和香草精,用打蛋器低速打半分钟
5.麵粉加入苏打粉,泡打粉和盐一起过筛
6.将面粉分开3次加入,以切拌方式溷合均匀
7.最后加入融化牛油,分开两次加入
8 预热烤箱160度c,烤60分钟或用竹签插入蛋糕,拔起来竹签是干净的,就可以了。

小撇步

1.麵粉用中筋或低筋都可以,中筋口感会比较扎实。低筋比较柔软细腻。
2.我用的锡纸盒所以不用涂油和放纸,如果你用普通的烤盒,必须抹上一层薄薄的牛油,铺上一层油纸,这样比较好脱模。
3.如果没烤箱,这是食谱也可以拿来蒸,水滚后,蒸45分钟即可

Banana cake recipe

2 eggs (net weight 120g)
50g unsalted butter (melted into liquid by heating)
100g low-gluten flour/cake flour
50g Caster sugar
200g banana (peeled)
1/2 tsp baking soda
1/2 tsp Baking powder
1/4 tsp salt
1/2 tsp vanilla extract (you can leave it out, it is especially fragrant)

Banana Sponge Cake Mold
20cm X 11.3cm X 5.5cm rectangular (3’s loaf pan)

Practice:

1. Put the banana in a bowl and mash it with a fork
2. Put the eggs into the basin, add fine sugar and beat with a whisk at high speed to form bubbles, and beat the whole eggs (add the sugar separately in 2 times)
3 Beat the eggs until fluffy and white, and you can draw a figure-8 shape (the whole process takes about 6-8 minutes)
4. Add in mashed banana and vanilla extract, beat for half a minute on low speed with egg beater
5. Add baking soda, baking powder and salt to flour and sift together
6. Add the flour in 3 separate batches, mix well by cutting and mixing
7. Finally add melted butter and add it in two separate additions
8 Preheat the oven to 160 degrees c, bake for 60 minutes or insert a bamboo skewer into the cake, pull out the bamboo skewer and it is clean, that's it.
