明天就是圣诞节了,好开心。今天来布置圣诞树,好吗?不过是用马卡龙哦。做了抹茶口味的马卡龙,中间夹上雪白蓬松的奶油糖霜,在从大到小叠得高高的。每层马卡龙都有美丽的天然抹茶玉绿裙边,加上金银球布置,整个看起来就像美美的圣诞树。好有气氛。隔夜冷吃,外酥内软,超好口感。经过好多研究测试各种食谱后,终于找到一个合适分量。不同抹茶粉不同颜色和潮湿度,要自行拿捏,不能加过多。
提示:做马卡龙, 一定要预先精准测量所有材料,且跟影片步骤一抹一样的做,成功率就会很高。这食谱不能再减糖咯,不过可以用没那么甜的馅料,黑巧克力酱来中和甜度。
收藏方式:夹馅马卡龙作好收普通冰箱,隔夜冷吃,口感最佳。普通冰箱冷藏3天内吃完。

Tomorrow is Christmas Day, so happy. Let’s decorate the Christmas tree today, okay? But by using Macarons. Made matcha flavored macarons, with snow white fluffy whipped cream frosting in the middle, which are stacked high from the largest to the smallest size. Each layer of macaron has a beautiful natural matcha kelly green feets/skirt, plus gold and silver balls decoration, looks similar to beautiful Christmas tree. Filled with Christmas festive feelings. Eat cold the next day, crispy on the outside and soft in the inside, great texture.
After a lot of research and testing various recipes, I finally found a recipe with right ratio. Different matcha powder have different colors and moisture content, so adjust accordingly and don’t add too much.
Tips: making Macaron, all ingredients must be accurately measured in advance, and done in the exact same way as per video, don’t overmixed, the success rate will be very high. This recipe can no longer reduce sugar, but you can use less sweet fillings, Dark Chocolate Ganache to balance the sweetness.
Storage Method: Chill sandwiched macarons in normal fridge, eat cold overnight for best texture. Keep in normal refrigerator up to 3 days.

♦食谱=14块马卡龙饼 (4cm, 4.5cm, 5cm, 6cm, 7.5cm 圆磨具)=
52.5克 杏仁粉
48克 糖粉
3克 抹茶粉
少许(2克)盐
40克 蛋白
少许(0.5克) 塔塔粉
40克 细纱糖
(开冷气/风扇 吹干30-40分钟)
(预热烤箱150C: 15分钟(小), 20-25分钟(大)。烤完,关烤箱,静制5分钟再取出)
(上下火,不开旋风,最底层烤)

=淡奶油糖霜=
175克 动物性淡奶油(冷)
17克 细纱糖
8克 普通面粉(烤过)
1克 香草精

=布置=
金银球

=14pcs Macaron Shell (4cm, 4.5cm, 5cm, 6cm, 7.5cm round cutter)=
52.5g Almond Flour
48g Icing Sugar
3g Matcha Powder
Pinch (2g) Salt
40g Egg White
Pinch (0.5g) Cream of Tartar
40g Caster Sugar

(On aircond/fan dry 30-40minutes)
(Preheated Oven 150C: 15minutes (small), 20-25minutes (big). Once baked, close oven let set 5minutes before taking out)
(Top Bottom Heat, No Fan Force, Lowest Rack)

=Whipped Cream Frosting=
175g Dairy Whipping Cream (Cold)
17g Caster Sugar
8g All Purpose Flour (Baked)
1g Vanilla Extract

=Decoration=
Gold silver balls
