最近一直下雨,来做一个暖心食谱,大型的鸡肉派。今天用了大型深底的挞磨来制作,上面还有简单小花型布置,看起来更高贵壮观。外层香酥黄金派皮,里面有满满丰富的馅料。引用鸡肉,蘑菇,西兰花,马铃薯,萝卜等用自制鸡高汤慢慢的熬制成浓稠的派馅浆汁。外酥内软,吃下去每一口都很幸福,暖心。
♦烤好放凉再脱磨,不然馅料松散,饼皮塌裂哦~
♦烤好放凉收在密封塑容器,放普通冰箱3-5天,要更久收冰库冷冻。要吃前解冻,用toaster弄热回温,饼皮回酥好吃。

It has been raining lately, let’s make a heart-warming comfort food, a giant chicken pot pie. Today, I used a large deep tart mould to make it, with simple mini flower shaped decoration on top, which looks elegant and grand. The flaky golden pie crust is loaded with rich fillings within. Using chicken, mushrooms, broccoli, potatoes, carrots, etc., slowly simmer with homemade chicken broth into a thick pie filling gravy. Flaky outside soft tender inside, every bite is filled with joy comfort heart-warming.
♦Bake and let cool before unmoulding, otherwise the filling will loosen and the crust will collapse~
♦After baked and cooled, keep in airtight container, store in normal fridge for 3-5 days. For longer storage freeze it in the freezer. Thaw before eating, reheat with toaster, let cool for the crust to flaky back and delicious.

♦食谱= 9英寸活底挞磨(3英寸深)=

=鸡肉馅=
600克/毫升 鸡高汤(鸡+水,小火熬30分钟)
345克 鸡胸肉 (用盐,胡椒粉,蒜头粉腌制)
26克 无盐牛油
适量 食用油
140克 白洋葱
140克 萝卜
185克 赤褐色马铃薯
100克 西兰花
90克 蘑菇
3-6克 盐
1克 胡椒粉
2克 蒜头粉
2克 洋葱粉
25克 普通面粉
122克 动物性淡奶油
130克 青豆
1克 荷兰芹

=饼皮=
300克 无盐牛油(冷)
500克 普通面粉
20克 细纱糖
5克 盐
15-20克 冷水

=蛋液=
1 鸡蛋
1茶匙 奶油/牛奶

(预热烤箱190C: 55-60分钟)
(中下层(第四层),上下火,不开旋风)

=Chicken Fillings=
600g/ml Chicken Broth (Chicken+Water, Boil simmer low heat 30minutes)
345g Chicken Breast (Marinated with Salt, Pepper, Garlic Powder)
26g Unsalted Butter
Enough Cooking Oil
140g White Onion
140g Carrot
185g Russet Potato
100g Brocolli
90g Button Mushroom
3-6g Salt
1g Pepper
2g Garlic Powder
2g Onion Powder
25g All Purpose Flour
122g Dairy Whipping Cream
130g Green Peas
1g Parsley

=Pie Crust=
300g Unsalted Butter (Cold)
500g All Purpose Flour
20g Castor Sugar
5g Salt
15-20g Cold Water

=Egg Wash=
1 Egg
1tsp cream/milk

(Preheated Oven 190: 55-60minutes)
(Mid bottom (4th Rack), Top bottom Heat, No Fan Force)
