最近好多人要求这个小面包食谱哦。今天来自制墨西哥咖啡包,也称RotiBoy。里面是柔软拉丝的面包, 外面有一层薄脆的咖啡饼干。因为有很多水份材料加入,所以面团非常粘手,手搓就点靠技巧。面包成果出来非常柔软,蓬松,又加上外面一层脆又苦甜的咖啡饼干,口感很好。刚烤出来的面包最香酥新鲜了。收在密封塑料带,室温可存留3天,冰库可存留一个月左右,要吃前解冻,用toaster弄热回温,饼皮回酥即可保持面包原柔软度。

Recently, many people have requested this small buns recipe. Today will be making Mexican coffee buns, also called RotiBoy. Inside is soft fluffy pull string bread, and outside is a thin layer of crisp coffee biscuit. Because there are a lot of liquid ingredients added, the dough is very sticky, thus, hand-kneading requires some skills. The bread turned out to be very soft and fluffy, and with a layer of crisp bittersweet coffee biscuit on the outside, its texture is good. Freshly baked bread is the most fragrant, crispest and freshest. Store them in sealed plastic bag, at room temperature for 3 days, and the ice storage for about one month. Thaw before eating, reheat with toaster, let cool for the crust to crisp back and can maintain original softness of the bread.

♦食谱=6粒咖啡包=

=面包=(84克/份)
150克 温牛奶(40C)
5克 速溶酵母
3克 细纱糖
250克 高筋面粉/面包粉
13.5克 奶粉
45克 细纱糖
½鸡蛋 (27-30克)
35克 无盐牛油(软化)
3克 盐

=馅= (5克 x 6份)
总30克有盐牛油(冷)

=咖啡饼干=
3克 速溶咖啡粉
5克 烧水
35克 无盐牛油(软化)
35克 细纱糖
½鸡蛋 (27-30克)
35克 低筋面粉/蛋糕粉

(预热烤箱180C: 15分钟)
(上下火,不开旋风,中层烤)

♦Recipe =6pcs Coffee Buns=

=Bread= (84g/pc)
150g Warm Milk (40C)
5g Instant Dry Yeast
3g Castor Sugar
250g High Protein Flour/Bread Flour
13.5g Milk Powder
45g Castor Sugar
½ Egg (27-30g)
35g Unsalted Butter (Soften)
3g Salt

=Fillings= (5g x 6pcs)
Total 30g Salted Butter (Cold)

=Coffee Biscuit=
3g Instant Coffee Powder
5g Hot Water
35g Unsalted Butter (Soften)
35g Castor Sugar
½ Egg (27-30g)
35g Low Protein Flour/Cake Flour

(Preheated Oven 180C: 15minutes)
(Top Bottom Heat, No Fan Force, Middle Rack)
