Ingredients:

Mooncake Pastry
(饼皮材料):
360g plain flour (普通面粉)
1 tsp baking powder
1/2 tsp baking soda (苏打粉)
2 egg yolks (蛋黄)
1 Whole egg (全蛋)
240g mooncake syrup/golden syrup (糖青)https://youtu.be/IRjfaawR5tQ
80g cooking oil or peanut oil (食油或花生油)

Filling :
500g grated coconut (白椰丝)
200g caster sugar (细砂糖)
4 pandan leaves (班兰叶)
1/2 tsp salt (盐)
40g cooking oil (食油)
60g fried glutinous rice flour/ Koh Fun(糕粉)

For glazing :
1 egg yolk (蛋黄)
1 tbsp egg white (蛋白)
1/8 tsp salt (盐)
