»如用不同月饼磨具,请用比率来算。例子(100克磨具):
饼皮=56/135x100=42克
馅料=79/135x100=58克

»If use different mooncake mould, please use ratio to calculate. Example (100g mould):
Crust=56/135x100=42g
Fillings+egg yolks=79/135x100=58g

Cookies们,再过整整两个月就是中秋节了,那么早就已经有很多人开始问我月饼食谱了,下面有我个式的月饼食谱Playlist, 点击来看哦~今天做个传统的”上海月饼”。这食谱很好吃,因为外皮是用类似水果塔的Pastry Crust酥皮。酥皮配上少糖白莲蓉/少糖芋头馅+香脆的瓜子+咸香的咸蛋黄, 3层次的香味及口感。好吃,做来庆中秋吧~

Hi Cookies, exactly two months after today will be Mid-Autumn Festival, so many people have already started asking me about mooncake recipes. Below is my variety of mooncake recipe’s Playlist, Click to watch them~ Today I made traditional Shanghai Mooncake. This recipe is delicious because the skin is made with Pastry Crust a bit similar to the tart shell of my fruit tart recipe. Buttery pastry crust is paired with less sugar white lotus paste/ less sugar yam paste + crispy melon seeds + fragrant salted egg yolk, 3 layers of aroma flavor and texture. It’s delicious, let’s make them to celebrate Mid-Autumn Festival~

66克 鸡蛋
140克 牛油(冷)
235克 普通面粉
40克 奶粉
40克 玉米淀粉
50克 糖粉
½茶匙 盐

=馅料 (66克/颗)=
600克馅料 (300克白莲蓉+300克芋头馅)
10颗 咸蛋黄
2汤匙 米酒
60克 瓜子

=蛋黄液=
1颗 蛋黄
1汤匙 牛奶

=布置=
瓜子
黑芝麻
(第一烤)烤箱180C: 15分钟
(第二烤)烤箱180C: 15分钟

♦Recipe =10pcs Mooncake=(135g/pcs)
=Crust (56g/ball)=
66g Eggs
140g Unsalted Butter (Cold)
235g All Purpose Flour
40g Milk Powder
40g Corn Flour
50g Icing Sugar
½tsp Salt

=Fillings (66g/ball)=
600g Fillings (300g Lotus Paste+300g Yam Paste)
10 Salted Egg Yolks
2Tbsp Rice Wine
60g Melon Seeds

=Egg Wash=
1 Egg Yolk
1Tbsp Milk

=Decoration=
Melon Seeds
Black Sesame Seeds

(1st Bake)Oven 180C: 15minutes
(2nd Bake)Oven 180C: 15minutes
