Ingredients :
Water dough (水皮):
125g (1 cup) plain flour (普通面粉)
1 tbsp caster sugar (细砂糖)
2 tbsp oil or corn oil (油或玉米油)
60ml water(水)

Oil dough(油皮):
100g (3/4 cup) plain flour(普通面粉)
60g lard or shortening(白油或猪油)

Purple Sweet Potato paste (紫薯馅)
300g purple sweet potato, steamed and mashed (紫薯,蒸熟压成泥)
35ml oil or corn oil (油或玊米油)
40g caster sugar (细砂糖)

Dough for swan’s head (天鹅头面团):
60g (1/2 cup) plain flour (普通面粉)
1 tsp caster sugar (细砂糖)
1 tbsp oil or corn oil (油或玉米油)
30ml water(水)

** Instead of lard , you can use butter, margarine or ghee
**也可以用牛油、玛芝琳或酥油来代替猪油
