Dark And White Chocolate Cheesecake 黑白巧克力芝士蛋糕

Ingredients for sponge cake (海绵蛋糕材料:
2 egg whites (蛋白)
55g (1/4 cup) caster sugar (细砂糖)
45g (1/3 cup) plain flour (普通面粉)
1 1/2 tbsp cocoa powder (可可粉)
1/8 tsp salt (盐)
2 tbsp milk (鲜奶)
2 tbsp corn oil (玉米油)

300g (10.6 oz )cream cheese (奶油芝士)

3 egg yolks (蛋黃)
60g (1/4 cup) caster sugar (细砂糖)
150ml milk (鲜奶)

1 1/2 tbsp gelatine powder (鱼胶粉)
60ml water (水)

300ml dairy whipping cream (动物性鲜奶油)

**Divide mixture into 2 portions (分成两份)

80g melted white chocolate (溶化白巧克力)
45g (1/4 cup) chocolate rice (巧克力米)

80g melted dark chocolate (溶化黑巧克力)

Add in melted white chocolate and chocolate rice in a portion
一份加入溶化白巧克力和巧克力米

Add in melted dark chocolate in a portion
一份加入溶化黑巧克力

Chocolate ganache (巧克力淋酱):
100g dark chocolate (黑巧克力)巧克力
50ml dairy whipping cream (动物性鲜奶油)鲜奶油
20g (1 tbsp) Butter (牛油)
