Pandan Coconut Cake 班兰椰子蛋糕

Ingredients:
250g butter (牛油)
150g (2/3 cup) caster sugar (细砂糖)
4 large eggs(鸡蛋)
220g (1 3/4 cups) plain flour (普通面粉)
1 tsp baking powder (发粉)
1/2 tsp salt (盐)
50ml coconut milk (椰浆)
3 tbsp pandan juice (班兰汁)~ 5 pandan leaves blended with 100ml water (5片班兰叶加100毫升水打烂)
30g desiccated coconut (干椰丝)

Topping (表面装饰):
40g (2 tbsp) Butter (牛油)
2 tbsp icing sugar (糖粉)
55g (1 cup) desiccated coconut (干椰丝)

Bake at 170°C for 55-60 minutes
以170°C烤55-60分钟
