Corn Layer Cake 粟米蛋糕

Ingredients:

60ml (1/4 cup) corn oil(玉米油)
75ml (1/3 cup) milk (牛奶)
1/8 tsp salt (盐)
20g (1 1/2 tbsp) caster sugar (细砂糖)
100g (1/2 + 1/4 cup )plain flour(普通面粉)
10g (1 tbsp) corn starch (玉米粉)
4 egg yolks (蛋黄)
1 whole egg (全蛋)

4 egg whites (蛋白)
1 tsp lemon juice (柠檬汁)
80g (1/3 cup ) caster sugar (细砂糖)

8” baking tin
8寸圆形烤模

Custard filling (馅料):
1 tbsp agar-agar powder (燕菜粉)
150g (2/3 cup) caster sugar (细砂糖)
500ml water (水)
250ml thick coconut milk (浓椰浆)
1/2 tsp salt (盐)
1 whole tin of kernel corn (1罐原粒粟米)
5 tbsp custard powder (蛋黄粉/吉士粉)
100ml water (水)
