Mooncake pastry: Mix ingredients [A] till well combined.Set aside for 2hours. Divide dough into 40g each. 2. Filling: Divide red bean paste into 40g each. 3. Wrap red bean paste with dough. Roll into balls. 4.Dust mooncake mould with some flour.Tap out excess flour.Place in a mooncake, press gently. Knock out and dislodge imprinted mooncake. Arrange on a baking tray . 5. Bake in a preheated oven at 180 C for 15 minutes. Remove and leave about 15 minutes until slightly cool. Glaze with beaten egg, return into the oven and bake for another 10 - 15 minutes until golden brown.
