古早味超下饭的【咸鱼花腩煲】
【Salted Fish Pork Belly Pot】


材料:
300克 五花肉
1块 梅香咸鱼
6条 辣椒干 (剪段)
1颗 洋葱 (切方块)
1小快 姜 (切片)
2瓣 蒜頭 (剁碎)
2棵 青葱(分開葱白和葱段)


腌料:
少許 糖
少許 鹽
少許白胡椒粉
1茶匙 麻油
1汤匙 木薯粉
**和五花肉 片一起拌勻。醃製20分鐘**


调味料:
2湯匙 头抽
1茶匙 黑酱油
1茶匙 鱼露
1茶匙 糖
1湯匙 清水
***拌勻,備用***


花雕酒 2汤匙(最後下)

做法:
1. 先将花肉片加腌料腌制30分钟
2. 鍋裡加入适量油,加入五花肉 片 過油,稍微炒片刻
3. 咸鱼炒香,撈出備用
4. 爆香蒜米,姜片, 辣椒干,蒜蓉和葱白
5. 加入花肉片炒至变色
6. 加入洋葱棵和鹹魚炒一炒
7. 加入调味料翻均
8. 倒入半杯清水炒均,小焖15分钟,最後撒入蔥段
9. 將炒好的花肉片移去陶瓷煲
10. 淋入2湯匙花雕酒炒均,煮滾,即可享用


P/s:
可以将洗净的五花肉,冰冻1小时后较容易切薄片、口感更好

【Salted fish belly pot】

Ingredient·:
300g pork belly
1 piece salted fish
6 dried chili (cut into sections)
1 onion (cut into cubes)
1 small piece of ginger (sliced)
2 cloves garlic (minced)
2 green onions (separate the whites and segments)



Marinade:
1/2tsp sugar
1/2tsp salt
1/2tsp white pepper
1 tsp sesame oil
1 tablespoon tapioca flour
**Mix well with pork belly slices. Leave it for 20 minutes**


seasoning:
2 tbsp soy sauce
1 teaspoon dark soy sauce
1 teaspoon fish sauce
1 teaspoon sugar
1 tablespoon water
***Mix well and set aside***

Huadiao wine 2 tablespoons (add last)


Practice:
1. Marinate the pork belly slices with marinade for 30 minutes
2. Add an appropriate amount of oil to the pot, add pork belly slices and fry for a while.
3. Sauté the salted fish until fragrant, remove and set aside
4. Sauté garlic, ginger slices, dried chili pepper, minced garlic and green onion.
5. Add pork belly slices and stir-fry until color changes
6. Add onions and salted fish and stir-fry
7. Add seasonings and mix well
8. Pour in half a cup of water, stir-fry until evenly mixed, simmer for 15 minutes, and finally sprinkle in scallions.
9. Remove the fried pork belly slices from the ceramic pot
10. Pour in 2 tablespoons of Huadiao wine, stir-fry, bring to boil, and enjoy


P/s:
You can freeze the washed pork belly for 1 hour to make it easier to cut into thin slices and taste better.
