Fullmoon Festival has arrived! 中秋节快乐!
Today, THROWBACK, I'm making Thousand Layers Yam Spiral Mooncake! So so pretty with thousand layers of light purple puff pastry!


So flaky, so fragrant with yam flavor and salted egg in the middle ~ representing the Full Moon! hahaha.. yummy!

♦Recipe
=YAM FILLINGS (30PCS)=
a) 750g Yam (Steamed for 20 minutes)
b) 200g White Sugar
c) 50g Vegetable Oil
d) 37.5g Corn Starch
e) Pinch of Salt
f) 15pcs Salted Egg Yolks
g) 1Tbsp Rice Wine

=WATER DOUGH (15PCS, 54g/ball)=
a) 300g All Purpose Flour
b) 150g Cake Flour
c) 87.5g White Sugar
d) 125g Shortening
e) 25g Unsalted Butter
f) Pinch of Salt
g) 225g Water

=OIL DOUGH (15PCS, 40g/ball)=
a) 400g All Purpose Flour
b) 150g Shortening
c) 50g Unsalted Butter
d) Pinch of Salt
e) 12.5g Yam Extract/ Yam Powder

Oven Bake 170C/338F - 25-30 minutes


♦食谱
= 芋头馅料(30份, 27克/小球)=
a)750克 芋头(蒸20分钟)
b)200克 白糖
c)50克 菜油
d)37.5克 玉米淀粉
e)少许 盐
f)15颗 咸蛋黄
g)1汤匙 米酒

= 水皮(15份,54克/小球)=
a)300克 中筋面粉
b)150克 低筋面粉
c)87.5克 白糖
d)125克 白油
e)25克 无盐牛油
f)少许 盐
g)225克 水

= OIL DOUGH(15份,40克/小球)=
a)400克 中筋面粉
b)150克 白油
c)50克 无盐牛油
d)少许 盐
e)12.5克 芋头香精/芋头粉

烤箱 170C/338F - 25-30 分钟
