Thank you, Mom for helping me to make "Kee Chang a.k.a. Alkaline Rice Dumplings” served with homemade Gula Melaka/Palm Sugar Syrup, so fragrant and delicious! The amount of alkaline water in glutinous rice should be just right; too much will bitter; too little will too pale and not chewy. Also, avoid using borax as it's harmful to health; vegetable oil can be used instead to prevent rice from sticking to bamboo leaves. Fill bamboo leaves only 70-80% full with rice, wrapping loosely so rice has enough space to expand without becoming hard or dense. String should be tied neither too tight nor too loose; too tight will burst during cooking, too loose water will seep in and become mushy. Using pressure cooker greatly reduces cooking time. Best eaten completely cooled. Tearing open bamboo leaves reveals golden triangular Kee Chang, each one cute and beautiful. Drizzle with Gula Melaka syrup, dripping down naturally—mouthwatering! Dumplings texture is soft, chewy, and bouncy, perfectly complemented by the caramelized sweetness of Gula Melaka Syrup, absolutely divine! Storage method: For best taste, eat completely cooled. Store at room temperature for 1 day. For longer storage, keep in airtight container freeze in freezer.
